A great bike season

This strange Summer and Autumn let our guests live their holiday time in a more relaxed and thoughtful mode. As in the past the most loved private tour we used to organize was related mainly with wine and food, this year private bike tour hit the top of the list. 

Our local guides structured several new itineraries for various levels of preparation and with road bikes, mountain bikes or e-bikes to add them at our portfolio of tested bike tour paths, adding innovative and memorable food stops to recharge the batteries a bit and a lot of  surprises. 

Bike in Tuscany can be relaxing, riding through sunflowers fields or vineyards, around lake coasts or seaside, more challenging if you prefer to face up to the rolling hills or surprisingly amazing if you decide to explore the mountain part.

Make the most of your #stayathome time

In this difficult time, we are encouraged to spend time at home and practicing social distancing. Travels and trips need to have a stop for a while and even our daily routines have suddenly changed. Some of us may decide to spend this stay at home time to recreate the magic atmosphere enjoyed during a past vacation looking at the pictures or at the videos, some may wants to search for their next destination while others could rely on food for a multi sensorial reminder of a happy time. Food is evocative, tells a story and can recall forgotten emotions. Preparing it, is both challenging and relaxing.  In Italy we like to make home made pasta, our primary comfort food! 
Here's the tagliatelle fresh pasta  traditional recipe that you can learn to make during one of our cooking classes and can easily reproduce at home:


Tagliatelle (homemade pasta) - for 6/8 persons 
Ingredients:
6 whole eggs
ca. 800 grams all-purpose flour
1 tablespoon olive oil


Make it up a sort of flour mountain and create a hole in the middle. Break the eggs putting them in the hole and mix with flour and olive oil by using a fork. Mix all ingredients and roll out the dough into a thin layer. Leave the dough resting for 10 minutes and cut the pasta into Tagliatelle when the dough is a bit dry.

our Traditional recipe of Tuscan Ragù sauce


Meat Ragù

Finely chop onion, celery, carrot and parsley and a garlic head and put into large pot with plentiful olive oil. When the mixture is golden, add the minced meat (usually veal and pork)  stirring for ca. 20 minutes over low heat until meat is brown and all water evaporated. Add a glass of a good Tuscan red wine and let evaporate.
Add some rosemary, sage, laurel if you like. 
Then add
 2 bottle of tomato sauce, salt and pepper, 2 tablespoons of tomato paste.
Let it simmer over low heat for ca. 2.5-3 hours adding now and then some warm water.


Enjoy your Tuscan dinner and think about all the beautiful days to come!

October is the favorite moment for food and wine passionates to indulge in Tuscan delights. Sharing pleasures of the tables and of the glass with family or friends without worrying about creating the itinerary, do the bookings (sometimes with some lost in translations situations!) inform everyone and drive is a real relief! See the relaxed faces :-)

Summer is gorgeous but Fall is extremely charming! In Cortona, the beauty of the landscape is at its most and all the locals are busy harvesting:grapes, olives, mushrooms, blackberries, nuts of all kind, chestnuts, figues ...
"Foodly" speaking is the best season of the year. Everyone is so excited that you may wanna be a part of it.

Easter is spring most important festivity for Italians in general. A nice occasion that we like to share with our guests is Easter breakfast, when families invite relatives and friends for an early food feast that prepare everybody for a great day!

The protagonist in Tuscany is the CIACCIA. Ciaccia with cheese or pancetta     (bacon like but more peppery and seasoned) is the queen of the table. 

Some of our guests decide even to take a cooking class to learn how to do it. Curious?

In Italy, food is at the center of social life. For a family, eating together for dinner is a important moment to talk about what happened during the day and to share emotions and impressions, Sunday lunch is a not missable date for meeting grandparents and eating Nonna (grand-mother)'s traditional recipes. For a young couple a dinner date is a crucial moment and friends too when they want some quality time, organize a food event to enjoy the hours together.

Even in other countries food has this special characteristic to bring people together, but here the phrase " hai mangiato" (did you eat?) is like a a leit motiv,  the litmus test of someone's well being, that one asks to his/her loved ones as a sign of caring. 
We are also very lucky, here in the Bel Paese, as our land is capable of giving us wonderful and high quality products.  Once here you will face the difficulty of what choosing as any dish will whet your appetite. Simplicity and quality are the peculiarity of Italian cuisine and any region has its own shiny tradition. Tuscany makes no exception, our rustic and peasant traditions gave life to unrivaled foods.
